Pineapple Express Chicken and Rice
Two Bell Peppers (color is up to you)
Canned Pineapple Chunks
Green Onion
Chicken Tenderloin 1 1/2 lbs.
Teriyaki Sauce 1/2 a cup
Soy Sauce 1/2 a cup
Brown Sugar 2 table spoons
Sesame seed oil 1 table spoon
Instant Brown Rice 2 cups
Garlic Powder 1/2 a table spoon
One Pineapple
Step one: chop up bell peppers put in a pan with a little olive oil on medium heat until tender
Step two: chop up green onions put to the side
Step three: In medium size pot add two cups water and a drizzle of olive oil to a boil, add two cups instant brown rice reduce to medium heat until rice is tender (if you need to add more water until rice is tender add 1/2 a cup at a time) once done out to the side
Step four: With scissors cut chicken tenderloins into small pieces and place in a bowl with the teriyaki sauce, soy sauce, garlic powder and brown sugar, let sit for about 10 minutes, heat up grill pan on medium heat with a little olive oil while soaking the chicken In the marinade.
Step five: Drain can of chunked pineapple and put in a bowl with paper towels, squeeze out water out of pineapple chunks, place these on your heated grill pan, two minutes each side or until you see grill marks, put to the side once done
Step six: Add chicken to grill pan, until golden brown and fully cooked inside
Step seven: If you choose to serve your dish inside a pineapple you will need to cut the pineapple in half and cut a hole in each side of the pineapple and start core out the inside of the pineapple with a spoon (kind of like you would do a pumpkin)
Step eight: Add grilled chicken to the pan with the bell peppers and add the grilled pineapple chunks stir for one minute on low heat
Step nine: Add green onion to instant brown rice along with the table spoon of sesame seed oil on no heat and stir till ingredients are combined
Step ten: Add rice to one side of the dish or pineapple if you choose and the chicken, Pineapple and peppers to the other side, optional to top with sesame seeds as garnish
This recipe is easy and healthy if you are looking for a light dinner. During the summer, I always crave chicken and pineapple together but we don't have an outside grill so having a grill pan still gives that grilled flavor along with grill lines. The grilled chicken and pineapple recipe of you choose to serve it inside the pineapple is always a crowd pleaser it looks like it took you all day to make when in reality this meal can be under $30 and only takes an hour to put together.
